La Kartoffelsalat es uno de los platos más conocidos de la cocina alemana, cuando estuve allí probé algunas buenísimas, casi siempre como acompañamiento de algún plato más consistente, el caso es que después he ido buscando recetas para hacerla, pero he encontrado tantas y tan distintas entre si, que he acabado, como casi siempre por fabricarme mi propia receta, más o menos parecida, aunque como en este caso hay tantas variantes de esta ensalada dentro de la misma cocina alemana que ¿quién puede decir que la mía no es una de ellas? El caso es que a nosotros nos gusta mucho esta forma de hacerla.
Como en cualquier ensalada, la cantidad de los ingredientes es meramente orientativa, depende del gusto de cada uno.
Ingredientes:
-5 ó 6 patatas medianas que sean buenas para cocer
-1 vaso de caldo de carne o verduras
-1 cebolleta o media cebolla dura
-un par de huevos cocidos
-4 buenas salchichas alemanas
-unos cuantos pepinillos alemanes (la cantidad depende de lo grandes que sean) y un par de cucharadas del líquido del frasco.
-4 cucharadas de mayonesa casera o de bote (a mi me gusta la de bote, es uno de mis defectos)
2 cucharaditas de mostaza (yo le pongo mostaza a la antigua, de la que lleva las semillitas)
-sal.
Así se hace:
Se cuecen las patatas con su piel en una olla con abundante agua con sal.
Una vez cocidas se sacan del agua y aún calientes se pelan y se cortan en rodajas o en trozos, se ponen en un cuenco y se les echa el caldo caliente. Se dejan reposar al menos media hora para que absorban el caldo. Una vez pasado este tiempo, se puede quitar el caldo que no se haya absorbido, o se deja para que quede más caldoso, yo se lo suelo quitar.
Se añaden a las patatas la cebolla cortada a trozos, las salchichas en rodajas y los pepinillos toceados.
En un cuenco se mezcla la mayonesa con la mostaza y el líquido de los pepinillos, se debe probar para que quede a nuestro gusto y si hace falta ajustar las cantidades.
Se vierte esta mezcla sobre las patatas y se mezcla todo bien, normalmente las patatas absorben la salsa y queda bastante espeso. Se añaden los huevos cocidos cortados en cuartos.

He comido muchas veces esta ensalada, porque he trabajado en muchos hoteles y entre las variedades de ensaladas de los buffets siempre estaba ésta.Pero no la he hecho nunca en casa y no se porqué. Como ya has hecho tu el trabajo de recopilación de recetas, voy a aprovecharme y haré directamente la tuya, que seguro que está buenísima.

ResponderEliminarEn Suiza también le han cogido el gusto, mi tía la prepara a menudo. A mi la mayonesa no me gusta, así que a veces la prepara sin aliñar y deja varias salsas dispuestas para que cada comensal se la prepare a su gusto.

En Viena se hace una ensalada parecida, pero no lleva salchicha, esa se pone acompañando la ensalada, y el aliño es muy parecido, pero en lugar de mayonesa, se hace con yogurt, es una ensalada que me encanta, y cuando hago gulach ungaro receta que también me traje de allí y que me pasó un ungaro, suelo acompañarlo de esta ensalada.
