Todos los años cuando se acerca la Navidad me gusta preparar un buen trozo de salmón marinado para preparar algunos aperitivos o para solucionar algunas cenas con muy poco trabajo.
Este año no me he podido resistir a este salmón marinado con remolacha que me ha seducido con ese precioso color rojo combinado con el naranja del salmón.
La preparación no tiene nada de dificultad, a mi lo único que se me hace algo pesado es cortar el salmón en lonchas finas, pero la verdad es que merece la pena para luego disfrutarlo sobre una buena rebanada de pan untado con mantequilla, queso crema, un poco de mostaza o mayonesa...lo que más os apetezca.
Rallar la remolacha y ponerla en un bol, añadir el coriandro, la ralladura de naranja, la sal y el azúcar y mezclar bien.
Poner el salmón en un recipiente con la piel hacia abajo. Cubrirlo con la mezcla de remolacha teniendo cuidado de que quede completamente cubierto.
Taparlo con film, poner encima un peso (un brick de leche irá bien) y guardarlo en el frigorífico durante unas 24 horas.
Pasado este tiempo, lavar el salmón bajo un chorro de agua fría para quitarle la sal, secarlo con un papel de cocina y cortarlo en lonchas finas con un cuchillo bien afilado.
Para conservarlo, ponerlo en un recipiente bien cubierto con aceite de girasol.
