Creo que no exagero si digo que este
marmitako de calamares es uno de los guisos que más nos ha gustado de los que hemos comido últimamente. Es una receta de Karlos Arguiñano que encontré en el libro
100 maneras de cocinar pescados y mariscos y estoy segura de que se va a convertir en uno de los platos que se repiten una y otra vez en mi casa.
La verdad es que su elaboración no puede ser más sencilla, se trata de un marmitako de los de siempre, pero con el toque especial del vermout que le da un sabor delicioso, al menos para mi, que me encanta esta bebida.
Lo podéis hacer tanto con calamar fresco como congelado, aunque siempre el fresco quedará mucho mejor. La guindilla, como siempre, la podéis omitir si no os gusta el picante. En cualquier caso, os animo a que lo probéis porque merece absolutamente el poco trabajo que da.
Poner a remojo la ñora y el pimiento choricero en agua templada, cuando estén bien hidratados, sacarlos del agua y raspar la carne con un cuchillo, reservarla.
Cortar en láminas el diente de ajo, trocear la cebolla y el pimiento.
En una cazuela con un par de cucharadas de aceite de oliva, pochar el ajo, la cebolla y el pimiento. Cuando tomen color, añadir el tomate troceado y la carne de la ñora y el pimiento choricero.
Añadir los calamares troceados. Pelar y trocear las patatas chascándolas, es decir, introducir el cuchillo y sin terminar el corte, girarlo un poco para que la patata se rompa y así pueda soltar su almidón para espesar el guiso.
Añadir la guindilla, remover bien y verter el vermout y un agua hasta cubrir el guiso, sazonar y dejar cocer tapado durante una media hora, hasta que las patatas estén tiernas. De vez en cuando sacudir un poco la cazuela para que las patatas vayan soltando el almidón.
